Dr. Cho Lay Aung, the founder of Tree Food, discussed the health benefits of jaggery and said, "Nowadays, people are not fond of processed foods that go through multiple stages of preparation. For example, boiling, cooking, and adding various ingredients. They prefer natural, simple foods without additives or chemicals. Jaggery is made using minimal processing methods, which aligns well with health benefits. It does not contain added chemicals. Jaggery is rich in iron and other minerals. In other regions, the availability of water is not as abundant. The palm tree requires minimal watering. The natural sweetness from these palm trees is used directly to make the paste. Because it is cooked immediately, it retains vitamins and minerals, making it very beneficial for health. Jaggery is commonly used in traditional Myanmar medicine."
